
PERU extending his
culture in USA
I apologize for not mentioned every excellent Peruvian restaurant in the states, but it is obviously impossible to do that.
At the present, the Peruvian influence in the U.S.A. is expanding rapidly in several aspects, one of the most salutary aspects being our cuisine which has expanded to most of the popular states such as California and New York, and to cities such as Chicago, Washington. D.C., and of course, in Florida to Miami. It is worth to mention that one of the most popular restaurants in Arlington, Virginia, that is considered as part of the Washington metropolitan area scene is Pollo Rico, where the chicken rotisserie offers the best tasting chiken in, perhaps, the world because of the type of spices used and the fact (secret information) that they use of some kind of aromatic wood.
Besides many other Peruvian restaurants in the Metropolitan MIAMI area, several new ones are worth to mention.
Adriana, is a Peruvian restaurant located in the ritzy part of Miami, on Harding Avenue, near the famous and very expensive Bar Harbour commercial center. Adriana offers a variety of Peruvian dishes that are admirably prepared and served properly and in a conservative amount. The Tiradito that comes with three sauces, green, red, and yellow is one of the best dishes. Most of the regular dishes including anticuchos offer a taste of Peruvian high quality dishes with elegance. The ambiance is friendly and elegant, especially when compared with many other Peruvian restaurants which are very criollo.
El Gran Inca, located in a very recommendable zone in Sunny Isles at 163 Street, offers the best anticuchos in the area and again, the portions are sober, not enormous or small, giving dignity to the flavor and the aroma. The restaurant also presents you with real chicha morada, which is being rapidly replaced by bottled chicha. At the bar you can be served a pisco sour that can be compared to any one of the best restaurants in Lima.
My good friend and lovely lady - Carmen, recently opened a new restaurant by the name of Delicias Peruanas, around the 2500 block on Biscayne Boulevard in a very accessible area, centrally located near downtown, with adequate public transportation in front of the restaurant. Delicias Peruanas I am sure will be very successful because of the experience of Carmen, who has had Miami area restaurants before, one in Sunny Isles and later one in Hollywood. Both of her restaurants were very successful and the food appreciable in quality and quantity. . . Carmen offers food with affection and the green chicken soup is incomparable. Additionally, she offers all the standard Peruvian dishes.
Mr. Julio Villavicencio just opened a very charming and well located restaurant named Senorio Peruanu, with a large room, very clean, and located in the North Miami Beach section of Miami on 163rd Street west of Biscayne Blvd. or Rt # 1. While visiting the restaurant I was impressed with the friendliness of Mr. Villavicencio and the spotless cleanliness of the place. They offer most of the popular Peruvian dishes.
There is another Delicas Peruanas restaurant also located in the west section of 163 St. in North Miami Beach. This is a fairly casual restaurant, whose specialty is roasted chicken. They offer entertaiment, such as live music and I believe one can dance.
There is somethimg that distiguishes the Peruvians from many other countries or regions of the whole world. And It is the ability of creating or modifying dishes, native or from other regions of the wrold, making them very attrative and special..
As an example, our famous “Pollos a la Brasa”, that due to the woods that are mixed with the charcoal, creates a special flavour that is dificult to forget. Furthermore it becomes a positive habit among people from different regions; so much that gringos as well as Russians and of course other “Latinos” frequent our Peruvian restaurants with satisfaction.
Pollos a la Brasa or Rotisery chicken is a dish that is taking over the culinary palate of many States of the USA. One of the best that I have visited is the POLLO INKAwhich restaurants are well appointed, of a large size, clean and elegant. Victor Escobar is a pioneer and offers a very good Chiken with salsa verde or green sause that is the delight of many American natives that have indicated to me that a Peruvians should comercialize it.
Pollos a la brasa
It is admirable that the popularity of Peruvian food is growing so rapidly that, at the present, there is a Peruvian restaurant in almost every section of the greater Miami area. Some of the restaurants offer music and entertainment. Generally speaking our cuisine culture is growing with honor and dignity and offers one of the greatest assets of our Peru, that is with no doubt, one of the best, if not the best, cuisines of the world.
All the above mentioned restaurants offer an acceptable selection of wines and desserts that are, again, comparable to the restaurants that I have frequented in Miraflores or San Isidro. While visiting Miami one can say with much pride, “Come to our Peruvian restaurants.” You will find quality, good service, and very accommodating prices.
Most of the standard dishes can be found at the many Peru restaurants around Miami
and somehow they have managed to use our spices and piquant flavours by importing such acutrements from our Peru. Thus, you can be served excellent Chupe de Mariscos, or papa a la Hauncayina, or arroz con pollo to mention only a few of them.
A very positive asset that we Peruvians have and that by all means must be preserved, is our ability to transform any food to a unique Peruvian flavour and make an excellent dish, such as our “CHIFA” food.
As a joke one time I indicated to one of our famous Congressmen that “They should consider cooking ceviche instead of being politicians.” Our ceviche is incomparable, especially with the “Leche del Tigre.”
